Chef Chuy is at it again with a 5 course pairing dinner featuring the amazing beers of Ballast Point. In addition, Colby Chandler, the genius mind and Specialty Brewer for Ballast. All beers will be 10oz pours, so we're not skimping on the beer in this BEER dinner. Here's the line up and pairings:
Meet and Greet - step into our private room and get to know your dining mates. Paired with Ginger Big Eye, the perfect conversation starter.
1st Course- Lobster Ceviche featuring local shallots, cilantro, basil, salad burnet, and heirloom tomato in a passion fruit citronette. Served with crispy won ton and paired with Thai Chili and Lime Wahoo White.
2nd Course - Ahi Salad with roasted dragon fruit, baby greens, pickled watermelon rind, and Shishito peppers in a ginger-blood orange vinaigrette. Paired with Pineapple Sculpin.
3rd Course - Baked jumbo scallops, basil, mango, jalapeño, red China rose sprouts and sweet onion wrapped in banana leaf. Paired with Pomegranate-Hibiscus-Cilantro Longfin Lager from the Cask!
4th Course - Swordfish Al Pastor marinated in dry chilis, achiote, pineapple, petite cilantro and lime. Served with mini corn tortilla and paired with Indra Kunindra
5th Course Dessert - Goat Cheese Cake with pistachio crust topped with candied prosciutto chips and pluot skin, sweet pickled pluots and honey comb. Paired with Barmy Apricot Ale
